Persimmon Cookies RecipeThe Request: "When I was little my grandmother made persimmon cookies and pudding, these were a family favorites. I am looking for a persimmon cookies recipe that has the persimmon pulp, raisins and spices.   She also made a persimmon pudding that she baked. All I remember was that she mixed the persimmon pudding and baked it the removed it from the over and put a sauce on top and baked it again. I have searched several different sites and can not find these recipes. Do you have anyone out there who may have the recipes?"

Persimmon Cookies Recipe

1 cup persimmon pulp

1 cup nuts

1 cup raisins

1 cup sugar

1/2 cup shortening

1 tsp soda, dissolved in pulp

2 1/4 cup flour

1/2 tsp cinnamon

1/2 tsp ground cloves

1/2 tsp nutmeg

1 egg

Cream shortening and sugar.  Add egg, soda and persimmon pulp.  Add dry ingredients, nuts and raisins.  Drop with teaspoon on greased cookie sheet.  Bake for 10 minutes in 350-375 oven.  Makes approx. 90 cookies.

 

Editor’s Note:  This recipe doesn't call for any salt.  Some people like to add 1/2 tsp of salt. Two Persimmon Pudding Recipes.
